Hi, im new to turbo sliders and was wondering if there is anything i can do to reduce the other competitors cars jumping about so much?

If I understand your question correctly, the only way to do this is to decrease the prediction. (page down during a race)
But remember, the prediction shouldn't be lower than the race ping, or you will experience lag.

Press F10 during the race to see your prediciton and ping. Prediction should be about 40 above ping with a stable connection. p2p programs and downloads can make the ping very unstable, but I guess you already know that.
